WHITE SAUCE

15g butter,

15g flour,

225ml milk.

METHOD

Melt the butter in a small pan until it starts to sizzle.

Add the flour off the heat and mix well to form a paste.

Return to the heat to cook the paste for 1 min.

Add milk a little at a time.

If milk is cold allow to heat before stirring into paste.

A whisk is useful for this as the action will incorporate the liquid evenly and quickly.

(If using an aluminum pan only use a wooden spoon)

Continue to add milk until a smooth sauce is achieved.

Season and use as required.
