SIMPLE CHOCOLATE MOUSSE
110g chocolate, 4 large eggs, opt.60ml sugar.

METHOD
Melt chocolate with 60ml liquid (opt), beat yolks into chocolate, do not scramble. Beat egg whites to stiff peaks, add sugar gradually if using, maintain stiff peak. Fold into chocolate. Divide between 4 ramekins & refrigerate 2 or more hrs.
