RED CABBAGE
500g red cabbage, finely sliced. 150ml port Madeira marsala 30ml dark brown sugar Salt & pepper.
METHOD
Put cabbage in a thick bottomed pan. Add the rest of the ingredients Simmer, cook 2hrs. If all liquid not gone, raise heat to caramelize cabbage. Hot or cold.
