GENOISE
225g eggs(4), salt, 110g castor sugar, 85g plain flour 30g cornflour.
Oven: 190C/Gas 5

METHOD
Beat eggs & salt, add sugar, beat over simmering water till warm. Beat till cool & thick. Sift flour & cornflour, fold into foam gradually. Pour into lined 8/9" cake pan, bake 25 mins, turn out immediately.
