BISCUIT
4 eggs separated 5ml vanilla 110g castor sugar salt 110g cake flour (light plain).
Oven: 190C/Gas 5

METHOD
Combine yolks and vanilla, whip adding half sugar in thin stream, whip 10 mins. Whip egg white with salt till half beaten add remaining sugar in thin stream, beat till stiff. Fold yolks and whites together. Sift flour, fold in gradually. Pipe into required shapes, dredge with icing sugar, bake 10 mins, remove from pan. Ind. Charlottes; pipe 8" /16" lengths, & 3" bottoms.
