BARBECUED LEG OF LAMB WITH ROSEMARY AND GARLIC

Ingredients

1 half leg of lamb

5g rosemary stalks

3 fat garlic cloves

salt and pepper

Serves: 3-4

Source: Ainsley Harriet's Barbecue Bible

Method

Remove the bone from the leg of lamb.

Open out the meat and trim off any excess fat and neaten the pieces of meat.

Break the leaves off the rosemary stalks in their rosettes, peel and slice the garlic cloves.

Make deep incisions all over both sides of the lamb. Push the garlic slices and rosemary leaves into the incisions, evenly all over both sides.

Season well.

Barbecue the meat over medium hot coals for about 40 mins for medium rare.

This could be roasted in the oven for approximately the same time.
