I have tried the recipe for Gratin Dauphinoise that is in this book.

The recipe differs in that it uses stock to cook the potatoes along wirth quantities of butter and creme fraiche and is baked for 1hr 15 mins. Very delicious, it is served with slow cooked shoulder of lamb.
